One Week In

We've made it a week and guess what -- this isn't that hard!  The first few days were an adjustment, but now it feels almost easy.

I said almost easy.  We still have these two to consider.  Please note Elle's high heels. 
Here are some things I've noticed thus far:



➜The first day I realized how much I mindlessly eat. Between making meals and snacks, I was constantly eating a little here and there -- lots of carby stuff.  Last Thursday I caught myself many times, going to take a bite of something before it registered that it was off limits. That in itself was very illuminating.

➜Also, I had gum and cough drops on the first day, but we were at Urgent Care twice last week and three out of four of us just finished antibiotics so, I'll give myself some grace.

➜Eric has probably already lost 5 pounds.  I think I maybe will gain them before this is all said and done, since all I eat are nuts and avocados. Lol.  However, I haven't been bloated in a week and my midsection looks a bit leaner, so?

➜I haven't thought about alcohol from Monday until today at 9pm when my kids made me want to down a handle of bourbon or gin or vodka.  I was no teetotaler -- we used to have a drink or glass of wine almost every evening -- so if you're considering this but hate the thought of giving up alcohol, know that it won't take long to get over. I promise.

➜I am hungry every two hours.  Pretty much to the minute. Might as well be a newborn.

➜ The best things we've eaten this week are meals we would have eaten anyway, just modified and with all grains eliminated.  For example, we had ribeyes on Saturday with roasted sweet potatoes and cabbage and a salad.  Simple.  Didn't need the bread.  DEFINITELY MISSED THE WINE.  Eric made wings for the Super Bowl and I found a recipe for ranch that wasn't very good actually, but sort of did the trick. It also probably cost $8 for a prepared cup, so we will be eating it.  All.

➜I don't think I'd be as successful if Eric weren't doing this with me.  If you want to do this and your spouse doesn't, find a friend to join you, it will make all the difference.

The next section is going to be for my own reference, so I remember what we've eaten and if we liked it and how I'd change it in the future.  Feel free to scroll right past, or if you're on the Whole 30 wagon, read and share your thoughts/recipes with me!

This was just ok.  Sauce was good, meatballs were dry, I served it with cauliflower rice and lettuce wraps.  Probably wouldn't make it again. Scratch that -- ERIN DON'T MAKE THIS AGAIN.

Similarly just ok. The avocado sauce got better when I ate it for lunch two days later. ↓ Chicken tenders were too cumin-y and ours were done much faster than the suggested cooking time.  Should have roasted the cabbage as well.  The picture below is how I used the leftover sauce and chicken for lunch...added greens, a hardboiled egg white, some pistachios, and an avocado.  It was bomb.  I also don't normally stop to eat lunch, rather scarf down the crusts of my kids' sandwiches and apple peels and maybe a rogue fruit snack or two, so this is rather novel to me.



I've also made chicken salad with -- and bear with me here because I'm going to use words that make me want to jack other bloggers in the face, words like compliant and coconut aminos and cashew sauce, but I simply see no way around it -- compliant mayo, grapes, dill, salt and pepper.  It was as good as any chicken salad I've had!

We had that last night and it was good!  I would modify by adding half the suggested stock, and adding potatoes to the onion and pepper mixture -- that would add some heft and make it a bit more filling.  I added an avocado at the table, along with cilantro and lots of jalapeños, and had I remembered I would have added fresh bell peppers too. This had great flavor and I'd make it again with these modifications.  Eric really liked it, too, it was super easy to make in a crockpot, so win win.

Also, if your sugar tooth starts acting up -- please don't punch me -- dates are delicious and very satisfying. I'm not kidding. I will  forevermore have dates in our pantry.  Speaking of pantries, ours has been so delightful to open this week, the junk has been parsed down and it feels very refreshing.

Part of me wonders if we were healthy eaters to begin with, and that's why this has been a pretty easy adjustment, or if our bodies are just very pleased to be eating the things they were designed to eat.

Discipline is not as hard as I thought, and we will definitely incorporate some of these recipes and practices into our lives going forward.

Reading food labels at the grocery store used to make me feel like a phony but now I feel like a badass because I know exactly what I'm looking for.

I have found myself daydreaming about pizza a few times, so don't think that this has all been fun and games.
